La Lignée is a unripened akawi type cheese, seasoned with pepper and made from A2 Jersey cow milk. Its texture is firm and yet supple. It can be served with fresh mint leaves and olive oil to accentuate its freshness or it can be grilled or melted to enhance its spiciness.
A2 milk is the result of a traditional genetic cow selection and not resulting from a genetic modification. Some researches tend to show that people who are lactose intolerant find A2 milk easier to digest.
